NIC Quick Recipes # 1 - Okonomiyaki (お好み焼き)

 

Okonomiyaki ,literally meaning "cook what you like, the way you like", is a pan-fried dish cooked with various ingredients traditionally associated with the Kansai region.

 

Ingredients:

300 g flour

200 ml water

2 eggs

1 cabbage

1 green onion (ao-negi)

200 g of thinly sliced pork; *alternatively beef, chicken, squid, or octopus can be used.

two 5g packets of katsuobushi (dried, tuna shavings)

4 tea spoons of vegetable oil

2 tablespoons of mayonnaise

4 tablespoons of brown okonomiyaki sauce

 

Preparation:

1.  Mix the water, flour, eggs together in the bowl.

2.  Cut four large, green cabbage leaves without the hard, white core into thin strings and slice the green onion.

3.  Add the cabbage and the onions to the bowl & mix.

4.  Cut the pork (or other meat) into 3 cm pieces, add to the bowl and mix.

5.  Add the vegetable oil to a heated frying pan.

6. Fry the dough like a pancake for about 5 minutes, then turn it over and fry for a further 3 minutes.

7. Add the katsuobushi, mayonnaise, and okonomiyaki sauce. Serve.
