NIC Quick Recipe - #4 Make your own Tempura

Tempura (てんぷら) is a style of cooking brought to Japan by the Portuguese in the 16th century that refers to deep fried batter-dipped seafood and vegetables.

 

 The Batter

Ingredients: 1 egg, 1 cup of ice-cold water, 1 cup of all-purpose or tempura flour

How to make: Beat the egg and mix with water. Add flour and whisk quickly.

 

 Cooking Directions
Heat fresh oil in a wok or deep pan to 170C. Pat dry all vegetables with a paper towel. Dip the vegetables into batter and deep-fry until golden (
usually takes 2-3 minutes), turning a few times for even cooking. Remove with long chopsticks and place on a paper towel. Serve with dipping sauce and condiments.

 

 What to Cook….            

Asparagus, bite-sized (deep-fry 3 or 4 sticks together)

Broccoli - prepared as for a salad
Carrots - cut into thin sticks

Green beans - halved lengthwise, or whole
Onions - sliced

Green pepper - halved or sliced
Mushrooms - halved, or whole

Shrimp, peeled, whole (hold by tail when dipping)

Squid, sliced into rings or strips
