NIC Quick Recipes # 2 -
Yakitori
(焼きとり)
Yakitori, literally meaning "grilled bird", is a cheap side dish that is commonly served in pubs, at street-side stalls, and at
festivals.
Ingredients:
(Serves 4)
300 g chicken breast
2 thick green onions (negi
葱)
8 15cm bamboo skewers (takegushi
竹串)
2 tablespoons of vegetable oil
4 tablespoons of soy sauce
3 tablespoons of mirin (みりん)
1 tablespoons of sugar

Preparation:
1.
Soaked the skewers in water to prevent burning
2.
Cut the chicken into 24 small pieces.
3.
Cut the green onion into 2 cm long pieces
4.
Mix the soy sauce, mirin, and sugar in a bowl. |

5.
Put the chicken & onion pieces onto the skewers.
6.
Add the vegetable oil to a heated frying pan.

7.
Over a medium flame, cook the skewers in the pan for about 2 minutes, turn them over and cook for another 2 minutes.
8.
Use a spatula to gently push the skewers into the pan to ensure even cooking. |

9.
When the chicken is cooked to an even colour, turn the flame to a low heat and add the mix from the bowl.
10.
Regularly turn the skewers whilst cooking for a further 3 minutes, then serve. |
